Zucchini Bread

Ingredients:

3 Eggs
2 c. Sugar
1 c. Vegetable Oil
2 c. grated Zucchini
1 tsp. Cinnamon
1 tsp. Salt
1 tsp. Baking Soda
1/4 tsp. Baking Powder
3 c. Flour
1 c. chopped Pecans
Here’s how ya do it:
Mix Sugar and Oil together.  Then, add beaten eggs, grated Zucchini and chopped nuts.  Mix well.  Next, add all the dry ingredient in a bowl.  Sift the dry ingredients into the wet mixture.  Mix well.  
Pour batter into 2 greased and floured loaf pans.  Bake @ 350 for about an hour.  Use the toothpick test.  Cool in pan for about 15 minutes.  Remove and finish cooling on baking rack.  These freeze really well:). ENJOY!!!!
